Homemade Ortega Cheeseburger

Grilled cheeseburgers are a regular on my summertime menu. Nothing beats the smell of burgers on the barbeque!

And, melty cheese is absolutely necessary! I used Pepper Jack cheese slices to compliment the green chile flavor.

This Green Chile Cheeseburger Recipe is a dish I used to make way back when I worked in a bar and grill at a fishing resort. That was my jack of all trades job. I was the bartender, waitress, cook, bouncer, cashier and busboy! I sure don’t miss that job. But I do miss the tasty food!

This Green Chile Cheeseburger was the most popular menu item. For good reason . . . it is Amazing!

This cheeseburger is not complicated. It doesn’t need to be.

A juicy burger, toasted bun, melted Kraft Pepper Jack Cheese, grilled whole green chile and a generous dollop of Mayo.

That’s it. Simple, delicious and uncomplicated.

Have I mentioned that I am working on my grill skills!?!

I never claimed to be a grill master. Can you say Flame Broiled!!!

Don’t worry, I didn’t burn down the neighborhood or anything.

See, we got the flames under control.

Back to the Green Chile Cheeseburger Recipe. Buns, burgers and chiles on the grill.

Tada! That is one beautiful burger! Now dig in.

I make something similar to this, but I add caramelized onions, guacamole and make the mayo into chipotle mayo by mixing it with a bit of pureed canned chipotle. Yum!

Chill or freeze your burgers

"This will help them keep their shape when they're cooking and stop them falling apart." You can also freeze them before cooking. Lay them on a tray in the freezer and, once they're frozen, pop them into freezer bags to save space. To defrost them, lay them back on the tray.

What is the best binding agent for burgers? ›

Why do my burger patties keep falling apart? ›

The most likely cause is that your meat is too lean. Fat is required to help hamburger hold together.

How do you make hamburger patties stay flat? ›

Place your thumb on the patty and press down gently. Make it so the patty is about 12 in (1.3 cm) thick in the center. Its edges will still be about 34 in (1.9 cm) thick. That small indentation is enough to help the burger hold its shape.

Should you put an egg in burgers? ›

What is the 777 dollar burger Gordon Ramsay? ›

According to Ramsay, the pub is known for its 777 burger, which is made with an American Wagyu patty, lobster meat, American goat cheese, pancetta, foie gras, arugula, and 100-year-old balsamic vinegar. After tasting it, D'Acampo and Ramsay both thought it was delicious.

Do you mix egg with ground beef for burgers? ›

Egg yolk acts as a binder and adds flavor

Is mayo a good binder for burgers? ›

While raw egg can be used to bind the burgers, mayonnaise does the trick while also adding an irreplacable dimension of creaminess, moisture, and flavor. When the patties cook, the mayo melts into the pockets of the meat to create a wonderfully juicy patty. Goodbye, dry turkey burgers.

Is mustard a good binder for burgers? ›

Binding agents like mustard and mayonnaise give meat a boost, help seasonings stick.

What can I use as a binder instead of eggs in burgers? ›

My secret to binding burgers with no egg and no breadcrumbs is chia seeds. The chia seeds do not add crunch to the burger so do not panic. You can't tell they are there at all.

What can you use instead of an egg to bind a burger? ›

"Flour is one of the most popular binding ingredients that you can use instead of eggs.

How do you make ground beef patties not shrink? ›

Basically, the higher the cooking temperature, the greater the shrinkage. Cooking ground beef at moderate temperatures will reduce shrinkage and help retain juices and flavor. Overcooking draws out more fat and juices from ground beef, resulting in a dry, less tasty product.
