Total Time: 40 minutes mins

Ingredients

Servings: 8 makes 22 potato pancakes

  • 4 cups mashed potatoes, *
  • 2 cups shredded mozzarella cheese, (8 oz)
  • 1 large egg
  • 1/4 cup all-purpose flour, or up to 1/2 cup flour for creamier potatoes
  • 2 1/2 Tbsp chives, chopped
  • 1/2 cup plain bread crumbs
  • 2 Tbsp Light Olive oil , or Canola oil to sauté
  • Sour cream to serve

Instructions

How to Make Mashed Potatoes:

  • Fill a 5 Qt pot with water. Add 1 Tbsp salt and peeled quartered russet potatoes (2 lbs or about 7 medium potatoes, peeled and quartered). Cook until easily pierced with fork. Drain well and mash in 4 Tbsp butter then let cool to room temp. Mashed potatoes can be made 1 - 3 days ahead.

How to Make Mashed Potato Pancakes:

  • In a large mixing bowl, combine 4 cups mashed potatoes, 2 cups shredded mozzarella cheese, 1 large egg, 1/4 cup flour and 2 Tbsp chopped chives. Use a potato masher to mash the mixture together until well mixed. If the potatoes are too loose to hold a patty shape, add flour a Tablespoon at a time.

  • Place a heaping tablespoonful of potato mixture between your palms and form into a round, 1/3" thick patty. Dredge both sides of the pancake in bread crumbs and set on a cutting board. Repeat with remaining pancakes.

  • Heat a large non-stick pan over medium heat with enough oil to lightly cover the bottom of the pan. Once oil is hot, add patties in a single layer and sauté 3-4 minutes per side or until golden brown. Repeat with remaining patties, adding more oil as needed. I usually have 2 skillets going at once to finish sooner.

Notes

*Recipe works best with mashed potatoes that aren't super creamy. If they are very moist, you may need a little more flour for them to hold a patty shape. Do not use instant mashed potatoes.

FAQs

Why are my mashed potato pancakes falling apart? ›

If your pancakes aren't sticking together while you form them, you can add a bit more egg, or put the potato mixture into the refrigerator to firm up again. If your pancakes are feeling too wet and won't form into a patty you can add a bit of flour to act as a binder.

Why are my potato pancakes mushy? ›

If you find that your potato pancakes are soggy rather than crispy, it's likely because your skillet and oil are not hot enough. The oil and pancakes should sizzle when they hit the pan. Also, do not overcrowd the pan by trying to cook too many pancakes at once. Work in batches.

Why aren't my potato pancakes sticking together? ›

Your Latkes Fall Apart

Luckily, the fix for both of these problems is the same: add some more starch — ideally in the form of matzo meal — which will soak up that extra moisture and bind the ingredients together more tightly. Flour works too, but it sticks together and makes for denser latkes.

What ingredient keeps pancakes from falling apart? ›

I can barely flip a pancake without it falling apart on me.

Your batter could be too loose—add a little flour.

Why are my potato pancakes grey? ›

It depends on whether your potatoes are turning gray before you cook them or after. When you grate raw potatoes, you release starch that can cause them to oxidize, or turn dark. The best way to keep that from happening is to cover the potatoes with cold water, then drain them very well and pat them dry before cooking.

What's the best potato to use for potato pancakes? ›

What kind of potatoes are best for potato pancakes?
  • starchy/mealy (like Russets, Idaho) – they are high in starch and low in moisture, they don't hold their shape very well, they are great for mashing, baking and boiling.
  • all-purpose (mixed potato type, like Yukon Gold)

What is the best oil for potato pancakes? ›

The Best Oil for Cooking Potato Pancakes

While I usually love cooking with olive oil, to pan-fry the potato pancakes, we need to use an oil that has a neutral flavor and high smoke point (olive oil is neither of these!). Canola oil, vegetable oil, peanut oil, and grapeseed oil would all work.

How do you thicken mashed potatoes for potato cakes? ›

Add a Thickening Agent

This is the most common way to thicken mashed potatoes. You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry. Potato flour and potato starch would work as well.

How do you keep mashed potatoes from falling apart? ›

You Add Potato Pieces to Boiling Water

Bring to a boil, then reduce the heat to a simmer. You do not want to leave the water boiling for long. The aggressive temperature and rolling bubbles will cause the potatoes to fall apart. Cook just until tender, and drain.

How do you keep potatoes from falling apart? ›

Most often, then, the solution to evenly cooked potatoes is cooking them twice: First, boil, steam, or steam-roast (a fancy term for cooking them with water in the oven) until they're mostly tender but not fall-apart finished. Second, brown the outsides and finish cooking the interiors on the stovetop or in the oven.

Why are my potatoes falling apart? ›

If your potatoes have been growing in very dry soil, the potatoes themselves will have a fairly low moisture content when harvested. What this then means is that when the potatoes are build they absorb more water and fall to pieces quite quickly.
