Christmas Cookies

Christmas baking season is just around the corner and I couldn’t be more excited. Every year, I look forward to baking batches of Soft Gingerbread Cookies, Sugar Cookies and Hot Chocolate Cookies to share.

This snowball cookie recipe has been a favorite in my family for years. Here’s my daughter making them about ten years ago, they are her all time favorite cookie. She’s currently looking over college acceptances and picking where to spend her next four years. Time flies!

After you make these snowball cookies, you can “warm up” so to speak with some Hot Chocolate Cookies. For decorating fun with kids, don’t forget to bake some Gingerbread Men this year, too.Don’t forget to save some for Santa!

Easy Snowball Cookies

This cookie recipe comes together quickly and easily. It’s a great one for kids to help with. Here is a quick run through the ingredients and recipe steps. Remember, the full printable recipe with measurements and detailed instructions is at the end of the post.

Ingredients At A Glance

  • Butter – Salted or unsalted, your preference, but this is not one where I’d sub margarine since the butter flavor is one of the stars of the show.
  • Vanilla – Because these cookies have so few ingredients, the quality of ingredients can really impact the result. If possible, pure vanilla extract is best. Please note the recipe calls for a TABLESPOON of vanilla, that is not a typo. Almond extract would also work, though will give a very different flavor.
  • Powdered Sugar – Also called confectioners sugar. If you don’t have any on hand, here’s how you can make your own. It’s a carrot cake post, but in it I show you how to make your own powdered sugar.
  • All-Purpose Flour – Make sure you measure by spooning your flour into the measuring cup then leveling off. Never measure your flour by scooping it with the measuring cup, you’ll end up with extra flour that can impact the recipe.
  • Salt – I typically use a kosher salt.
  • White Chocolate Chips And/Or Chocolate Chips – Honestly, ANY chocolate chips will work! These candy chips are super fun, and I am obsessed with these new Yummallo Rainbow Chips. They are PERFECT for snowballs.
  • Sprinkles – Optional, but fun and colorful! Sweets & Treats Boutique makes my favorite sprinkles.

Recipe Notes

Christmas Snowball Cookies

I used sprinkles in Christmas colors to keep with the holiday theme. Feel free to use any sprinkle colors you like and have fun choosing your colors. Blue sprinkles are lovely in these.

Snowball Chocolate Chip Cookies

For this batch I divided my dough, and added sprinkles to half, but added mini chocolate chips to the other half. A half cup of chocolate chips mixed in works perfectly.

Snowball Cookies No Nuts

This is a snowball cookie recipe with no nuts. If you want a nutty snowball cookie, add a half cup of chopped pecans or walnuts to the dough along with the dry ingredients.

Decorating Snowball Cookies

No need! These cookies look so pretty on a plate without requiring any frosting or decorating (or mess). You can sprinkle with powdered sugar if you like, but it’s not necessary.

FAQs

Why did my snowball cookies flatten? ›

Why did my snowball cookies flatten? The cookies will flatten slightly when baked, but they shouldn't flatten completely. If you skipped the chilling time, this may be why they spread. Another reason is if you place the dough on a hot baking sheet; if you have to reuse baking sheets, let them cool first.

How do you beat cookie batter? ›

Realize that most recipes combine the flour and other dry ingredients before adding them to the butter mixture. Raisins, chocolate chips, other "add ins" and, sometimes oats, are added last. Once dry ingredients have been added, don't beat vigorously or overmix. Overmixing can result in tough cookies.

How do you get powdered sugar to stick to cookies? ›

Place the cookies on wire racks to cool completely. The confectioners' sugar will melt a bit and get sticky; that's ok. Once the cookies have completely cooled, roll in confectioners' sugar again. This is when the sugar will really stick.

How do you fix cookies that didn't flatten? ›

Unfortunately, you can't fix the problem after the fact if you've baked a cookie recipe and the cookies didn't spread out enough as they baked. The edges have set and there's no going back. If they taste good nonetheless, you can still eat and enjoy them, or chop them up and add them to a batch of cookie ice cream.

Why is my snowball cookie dough crumbly? ›

Not enough liquid

There are a few things you can do if your cookie dough is too dry and crumbly. First, try adding more liquid to the dough. This could be milk, water, or even just additional eggs. If that doesn't work, you could also try melting some butter and adding it to the dough.

What happens if cookie dough is overmixed? ›

"Overmixing your dough will result in flatter, crispier cookies," Cowan said. If you overmix, you will end up aerating (adding air to) the dough, which causes the cookies to rise and then fall, leaving you with flat cookies.

What thickens cookie batter? ›

Soft – Dough that's “soft” or “runny” can be thickened by adding one or two tablespoons of flour to your mix. This will help keep your batch from “Spreading” and coming out of the oven looking like flat, not-so-cookie-like puddles.

Can you beat cookie dough too long? ›

Overmixing the dough: Overmixing can lead to tough and dense cookies. It's essential to mix the ingredients just until they come together to avoid developing too much gluten.

You'll end up with a grainy, unappealing texture. Lastly, store-bought powdered sugar generally includes corn starch, which prevents it from caking together. This can lead to unpredictable outcomes when you interchange the two.

Is it better to roll sugar cookies on flour or powdered sugar? ›

Use powdered sugar instead of flour to roll your dough: if you're like me and use every bit of your dough, I recommend using powdered sugar instead of flour to roll your dough. When I use flour it adds too much flour to the dough and makes it drier.

Where did snowball cookies come from? ›

The origin for pecan snowball cookies is unknown. Beloved in many parts of the world, these cookies may have traveled to the U.S. by way of immigrants from Eastern Europe or Mexico.
