Besan Milkmaid Burfi Recipe – Easy and delicious Indian sweet made with gram flour, condensed milk, cardamom and nuts.
What is besan milkmaid burfi?
It is an Indian sweet or fudge prepared with besan or gram flour, sweetened condensed milk, cardamom and nuts. There are many traditional burfi recipes and this one is the easier among them all. It is rich, delicious and easy to make during festivals such as Diwali, Rakha Bandhan and Holi. The texture of the burfi will be slightly hard and it is delicately flavored with cardamom.
How long can I store them?
They stay well for a few days at room temperature.
Step by step preparation:
Heat 4 tablespoons of ghee or clarified butter in a heavy-bottomed pan.
Add 1 cup of chickpea flour or gram flour to the pan and mix well.
Keep on stirring and roast for 10 minutes on a low flame, till nice aroma comes out of it.
Add cardamom powder and measured condensed milk and mix until well combined.
Keep stirring and cook for a couple of minutes or until it forms a thick mixture.
Remove the pan from the flame and let the mixture cool down a bit.
When it is still warm add powdered sugar and knead until soft and combined.
Transfer the mixture into a greased tray or tin and garnish with chopped almonds and pistachios.
Cut into desired shapes.

Great recipe. As usual I modified like I do with almost every recipe I try. I added and stirred in quite a bit of dry fruit before adding condensed milk (raisins, almonds, pumpkin seeds, flax seeds etc). Did not use sugar but added a tbs Honey to make it soft as my extra ingredients were making it too dry. Net result, amazing. Thanks for the recipe. Will be used quite often. Easy and taste to die for.

Barfi (also spelled as burfi, barfee and borfi) is a dense, fudge-like, perfectly crumbly, melt in your mouth, milk-based Indian sweet (mithai), usually made with milk powder and sugar. The word barfi originates from the Persian word barf, which means snow.
Barfi is one of many milk-based Indian sweets. Traditionally, it would have been made by slowly cooking milk down for hours until it condensed into the dough-like evaporated milk solids known as khoya or mawa. A quicker and easier way of making barfi starts with milk powder instead.
Besan Burfi or Besan ki Barfi is an Indian dessert made with gram flour, ghee, and sugar syrup and is laced with aromatic cardamom and saffron. These golden-hued squares are often made during festivals and special occasions--favored for their taste, as well as, their visual appeal on a pretty dessert tray.
There are two reason for this, either it is not completely cooked or you had put that burfi mixture on flame while cooking for more than the required time after adding sugar into it.
This burfi has its origins in the Indian subcontinent and is a staple dessert in Northern India, especially in the states of Rajasthan, Gujarat, Punjab, and Uttar Pradesh during Diwali or special occasions. It is believed to have originated in the medieval era when sugar was expensive and hard to obtain.
Both condensed milk and evaporated milk are forms of concentrated milk in which approximately 60 percent of the water content has been removed, but that is where the similarities end. Sugar: Sweetened condensed milk is about 45 percent sugar, while evaporated milk is unsweetened.
If dairy isn't an issue, heavy cream can substitute for condensed milk. But if you're avoiding dairy, the only thing that can sometimes substitute for condensed milk “as is” is full-fat coconut milk. However, full-fat coconut milk may not have the condensed milk consistency you're going for.
Condensed milk is evaporated milk that typically has sweetener added, so much so that the terms 'condensed milk' and 'sweetened condensed milk' are used interchangeably.
Here's another way to think of it: Condensed milk is evaporated milk with added sugar. Sweetened evaporated milk exists in the form of condensed milk, but there's no such thing as unsweetened condensed milk — that's just evaporated milk.
